This Fajita Lettuce Burger uses BUBBA angus beef burgers that are topped with your favorite fajita style bell peppers and onions and served on a lettuce wrap. You will love this low carb option that is still flavorful and filling!

There is something so good about the bell peppers and onions that are used in fajitas that is so good. I love how tender the bell peppers and onions get and the rich flavors from the taco seasoning that are added.
One night when I was making fajitas I had a realization that the bell peppers and onions would be a great topping for a burger. Today’s Fajita Lettuce Burger is in partnership with Bubba Burger.

How do you Make a Fajita Burger
Step 1: For the Grill: Heat the grill to medium high heat. Cook your BUBBA angus burgers on the grill straight from the freezer (no thawing required). Grill for 5-6 minutes on each side. When the juices begin to rise to the top of the burger it is time to flip them. Burgers are done when they reach an internal temperature of 160 degrees F.
Step 2: For the Skillet: Heat a large non-stick or cast iron skillet over medium high heat. Cook your Original BUBBA burgers on the skillet straight from the freezer (no thawing required). Cook for 5-6 minutes on each side. When the juices begin to rise to the top of the burger it is time to flip them. Burgers are done when they reach an internal temperature of 160 degrees F.
Step 3: For the Fajita Bell Pepper and Onion Mix: Thinly slice the bell peppers and onion . Heat 2 Tablespoons of olive oil in a large skillet over medium hight heat. Add the bell peppers and onion along with 2 teaspoons of taco seasoning. Sauce for about 10 minutes or until the bell peppers and onion are soft. Taste and adjust seasoning and add salt and pepper.
Step 4: Assemble: Place the iceburg lettuce leaf on a plate. Top with a slice of tomato, the burger and 1/4 of the fajita bell pepper mix. Enjoy!
What to Serve with these Burgers
Salads: I love salads so I often serve at least two with my burgers. Some that I love are this Summer Orzo Pasta Salad, Mediterranean Bean Salad, Mexican Street Corn Salad or this Lemon Arugula Salad with Pine Nuts.
Potatoes: Potatoes are almost always served next to my burgers. I love these Air Fryer Twice Baked Potatoes, Gouda Smashed Potatoes or these Spicy Lebanese Potatoes.
Vegetables: When I make burgers I like to serve a vegetable with it. I especially like these Mediterranean Roasted Vegetables, Simple Garlic Parmesan Green Beans or Turmeric Cauliflower.
Storage Tips
Store the leftovers burgers in an airtight container for up to 3 days.

- 4 slices of tomato
For the Fajita Vegetables
- 1 large bell peppers, seeds removed, thinly sliced {you can use 1/4 of each different color of bell pepper}
- 1/4 of a red onion, thinly sliced
- 2 teaspoons of homemade taco seasoning
