MEDITERRANEAN TURKEY HUMMUS PANINI

The crisp fall days have been moving into the Cleveland area and I am loving it. Fall is my favorite season. During the colder months we make a lot of warm panini style sandwiches. Whether it is a delicious grilled cheese, a BBQ Spiced Grilled Egg and Cheese Sandwich or a Mediterranean Turkey Hummus Panini, there is something comforting about a warm, gooey sandwich.

I love the combination of ingredients in today’s Mediterranean Turkey Hummus Panini. It uses your favorite bread and spreads Sabra’s Garlic Herb Hummus on both sides and then tops it with smoked turkey, sliced tomatoes, roasted red peppers, spinach, artichokes and havarti cheese. The sandwich is then toasted into a warm, crisp and gooey sandwich. We make this sandwich a lot, and for good reason!

This Mediterranean Turkey Hummus Panini uses Sabra’s new line of fresh tasting, wholesome, refrigerated spreads that are designed just for sandwiches. These are the first of its kind to hit stores and you will be able to find them in your deli section.  All three varieties are vegan, kosher, gluten-free, and non-dairy, contain 0g Trans Fat, 0mg Cholesterol and are made with the best quality ingredients.

I am loving this new product for all of my sandwich making needs. There are three flavors– Garlic Herb, Sea Salt & Cracked Pepper & Honey Mustard–which all work great on a variety of sandwiches. For example, I used the Sea Salt & Cracked Pepper Hummus Spread on this Mediterranean Veggie Sandwich and used the Garlic Herb Hummus Spread on today’s Mediterranean Turkey Hummus Panini.  I think the Honey Mustard Hummus Spread would be wonderful on a leftover turkey sandwich from Thanksgiving with a scoop of cranberry sauce and brie cheese. My mouth is watering just thinking of all of the options.

Here is the best part about the new Sabra hummus spreads–they are better for you than mayo. We are talking about 75% less fat than mayo and they use fresh ingredients and flavors. You know my love for hummus runs deep so any time that there is an easier, healthier way to use them, I am all for it!  Forget those sandwiches that use plain mayo and spice it up with a little flavor.

I love how convenient the bottle is for your sandwich making needs. If you keep these on hand you will never have to worry about a boring, tasteless sandwich again. And if you can’t use the whole bottle for your sandwiches you can also squeeze a little hummus out and use your favorite pretzels and veggies to finish it off!

Ingredients

  • 4 slices of bread
  • Butter
  • 4 Tablespoons Sabra Garlic Herb Hummus Spread
  • 6 slices of smoked turkey
  • 1 small tomato, thinly sliced
  • 3 oz. roasted red peppers
  • 2 handfuls of fresh spinach
  • 4 slices of havarti cheese
  • 3 oz. artichoke hearts, chopped {optional}

Instructions

  1. Butter one side of each slice of bread. Lay the butter side down on a cutting board. Spread 1 Tablespoon of the Sabra Garlic Herb Hummus Spread on the other side of each slice of bread {I squeezed it out to about 1 Tablespoon for each side instead of actually measuring it}.
  2. Layer the havarti cheese, spinach, tomato, roasted red peppers, artichokes and smoked turkey on one side of the bread and close the sandwich using the other slice of bread.
  3. Using a panini maker or a griddle toast each side of the sandwich for about 2-3 minutes, or until the bread becomes crispy and the cheese melts.
