Whether I am snacking on hummus with pita bread and vegetable sticks, or spreading it on a wrap, we always have hummus in our refrigerator.
It is a quick and easy snack that you can eat in so many different ways.
Today I partnered with my favorite hummus makers, Sabra, to bring you these Greek Hummus Pita Bites for National Hummus Day .
Yes, National Hummus Day! I love that there is a day devoted to all things hummus, but lets be honest, in my house we don’t need one day to celebrate hummus because we do that daily.
One thing I love about hummus is the large variety of flavors you have to choose from.
Did you know that Sabra has over 13 flavors of hummus to pick from, along with small little snack size hummus that you can eat on the go?
Today’s Greek Hummus Pita Bites use Sabra’s Roasted Red Pepper Hummus but you could choose to use any flavor that you like.
For example, I have made these Greek Hummus Pita Bites using the Roasted Pine Nut Hummus and the Classic Hummus and both of those flavors worked great.
The pita triangles are topped with a single layer of the roasted red pepper hummus and then topped with a Greek salad mixture. Do you remember my Greek Orzo Pasta Salad from earlier this week?
Well that is essentially the salads mixture that you top your pita bread and hummus with.
You can beat a single bite of pita + hummus + Greek salad.
My Grandma recently had a small get together at her house and I brought these Greek Hummus Pita Bites with me. They were a big hit.
If you have a party to go to this summer or a friend is having a backyard BBQ these would be a great appetizer to bring along.
You can have these little pita bites put together before you go or you can easily prepare all of your ingredients by cutting the pita bread into triangles, and chopping up your Greek salad mixture and then assemble them once you arrive.
Greek Hummus Pita Bites
Greek Hummus Pita Bites are the perfect bite sized appetizer for your summer back yard BBQ or party. Pita bread is topped with roasted red pepper hummus and a Greek salad mixtures of tomatoes, feta cheese, kalamata olives, cucumber, pepperoncini.
Ingredients
- 4 7 inch pita breads, cut into 4 pita triangles {a total of 16 triangles}
- 3/4 cup Sabra Roasted Red Pepper Hummus
- 1/2 cup crumbled feta cheese
- 1 pint cherry tomatoes, diced
- 1/2 large cucumber, peeled, seeds removed and diced
- 10 kalamata olives, diced
- 1/2 cup pepperoncini peppers, diced
- 1 teaspoon extra virgin olive oil
- 1/2 teaspoon dried oregano
Instructions
- Cut the pita bread into 16 triangles and arrange on a large platter or baking sheet.
- Spread a thin layer of the roasted red pepper hummus on one side of each pita triangle.
- In a medium mixing bowl mix together the feta cheese, tomatoes, cucumber, olives, pepperoncini, extra virgin olive oil and oregano.
- Top each pita triangle with the Greek salad mixture.
- Serve immediately or refrigerate in an airtight container.
Notes
These are best served immediately. If you want to make them ahead I would wait to put the Greek salad mixture on until you are ready to serve because the juices can begin to make the pita bread soggy.
