FALAFEL VEGETABLE KABOBS
Grilling season is upon us and I am so excited.
We love grilling in my house whether it is these Mediterranean Beef Kabobs, Greek Marinated Chicken, Yogurt Marinated Chicken, Turkey Kofta Kebab Recipe or these Chicken Kofta Kebabs.
I am excited today to be sharing a grilling recipe that is vegetarian and packed with protein.
If you like falafel then these kabobs are for you.
You can use a homemade falafel mixture or you can buy a pre-made mixture and form the falafel yourself.
I buy my pre-made falafel mix at Heinen’s.
Today’s kabobs are a rainbow of colorful vegetables paired with the falafel and finished off with a tahini yogurt sauce.
What I love about these falafel kabobs is that char you can get on the grill and the flavor that it infuses into the falafel and the veggies.

WHAT INGREDIENTS ARE IN THESE FALAFEL KABOBS?
FALAFEL: You can make homemade falafel or you can buy a pre-made mix to use. At Heinen’s they sell a 1 – 16 ounce container of Fedora Foods Famous Falafel Dough
BELL PEPPER: You can use any color peppers you like for the kabobs.
RED ONION: I suggest using a small red onion or you can also use a sweet onion.
ZUCCHINI
CHERRY TOMATOES
OLIVE OIL
OREGANO
SUMAC OR ZA’ATAR
HOW DO YOU MAKE THESE FALAFEL VEGETABLE KABOBS?
CHOP THE VEGETABLES: Cut all of the vegetables and put into a large bowl.
Drizzle the 2 tablespoons olive oil, salt, pepper, oregano and za’atar or sumac or spice of your choice and toss to combine.
CREATE THE FALAFEL: Create falafel with the pre-made mix using your hands to roll into about 2 inch balls or using a homemade mix.
ASSEMBLE THE SKEWERS: If you are using wooden skewers soak them for 15 minutes in water so they don’t burn. If you are using mental skewers you won’t need to soak.
Assemble the kabobs alternating onion, zucchini, tomatoes, bell peppers and falafel on the skewers.
GRILL THE KABOBS: Heat your grill for medium direct heat. Spray or brush the grill with olive oil.
Grill the kabobs for 8 minutes, turning occasionally so they cook evenly, until the falafel is getting a nice crust and the vegetables are soft.
WHAT SHOULD I SERVE WITH FALAFEL?
SALAD: Salads are always a great pairing with chicken. I really like this Mediterranean Bean Salad, Lemon Arugula Salad with Pine Nuts, Summer Orzo Pasta Salad or this Easy Lebanese Salad.
SIDE DISHES: If you like to pair vegetable side dishes with chicken you should try these Lebanese Green Beans, Turmeric Roasted Cauliflower or these Mediterranean Roasted Vegetables
POTATOES: Another great addition to this meal is potatoes. I often make Gouda Smashed Potatoes, Air Fryer Twice Baked Potato, Spicy Lebanese Potatoes or Lemon Cilantro Roasted Potatoes. Another great thing to serve this chicken over is Creamy Polenta.

Ingredients
- 1 - 16 ounce container of Fedora Foods Famous Falafel Dough
- 1/2 each of a red , yellow and orange bell pepper seeded, cut into 1- inch pieces
- 1 small red onion, cut 1-inch pieces
- 1 large zucchini, cut into chunks
- 1 cup of cherry tomatoes
- 2 Tablespoons olive oil, more for brushing on the grill
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon za'atar or sumac {optional}
- 4 or 5 metal or wooden skewers, soak the wood skewers in water for 15 minutes before grilling
- Fresh parsley
- Lemon wedges for serving
TAHINI YOGURT SAUCE
- 1 cup tahini paste
- 1/4 cup water, or more for consistency
- juice of 1 lemon
- 4 garlic cloves, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Cut all of the vegetables and put into a large bowl.

- Create falafel with the premade mix using your hands to roll into about 2 inch balls.
- If you are using wooden skewers soak them for 15 minutes in water so they don’t burn. If you are using mental skewers you won’t need to soak.
- Assemble the kabobs alternating onion, zucchini, tomatoes, bell peppers and falafel on the skewers.

- While the kabobs grill create the tahini garlic sauce. In a medium bowl whisk together the tahini paste, water, lemon juice, garlic, salt and pepper. Set aside.
- Garnish with fresh parsley, lemon wedges and serve with the tahini sauce.
Notes
If the falafel is not staying together well enough to put it on the grill you might want to quickly pan sear them for about 1 minute per side to help hold them together before threading them on the skewers.

Hi Julia// A Cedar Spoon, I was wondering if there is Greek yogurt in your tahini sauce as I didn't see any mentioned in the ingredients. How much yogurt do you suggest adding? Can't wait to try these yummy rainbow Falafel Vegetable Kabobs of yours!!! Kudos!!!
