HOW DO YOU MAKE A SKILLET PIZZA?

BRING THE DOUGH TO ROOM TEMPERATURE: Let the pizza dough come to room temperature.

Preheat the oven to 500 degrees.

PREPARE THE DOUGH: On a floured cutting board use a rolling pin and roll the dough ball so it is the size of the skillet.

Add the 3 tbsps. olive oil onto a 13 inch cast iron skillet and turn the skillet until the olive oil covers the whole skillet.

SPREAD THE DOUGH: Take the dough and place in the skillet. Use your hands to press the dough into the skillet until it fits.

TOP THE PIZZA:  Use a wooden spoon or a spatula spread a thin layer of red pepper sauce over the dough. Top with roasted red peppers, mozzarella cheese, the feta cheese and the oregano.

BAKE THE PIZZA: Bake the pizza for 20-25 minutes or until the edges of the crust begin to turn golden brown and the bottom of the pizza lifts from the skillet with a spatula.

WAYS TO MODIFY THIS CAST IRON PIZZA

SAUCE: I used a roasted red pepper sauce that my local grocery store carries. You can use a roasted red pepper sauce if you can find it or make it homemade here.

You can use a homemade pizza sauce, marinara sauce or a basil pesto would be a nice sauce to use. You can also use hummus like this Lebanese Hummus or Roasted Red Pepper Hummus, Baba Ghanoush or this White Bean Artichoke Dip

GREENS: I like to top this pizza with greens. Try arugula, microgreens, chopped romaine or spinach.

VEGETABLES: You can top your pizza with other vegetables before baking like bell peppers, cherry tomatoes, artichoke hearts, Kalamata olives, sun-dried tomatoes, red onion or marinated mushrooms. If you like pickled vegetables try adding Pickled Red Onions or these Simple Pickled Vegetables.

FINISHING SAUCES: A drizzle of olive oil or balsamic glaze adds a nice rich flavor.  Or add a tahini sauce or creamy dill sauce to the finished pizza.

HEAT IT UP: For the spice lovers try adding red pepper flakes, Aleppo pepper, jalapeño slices or hot sauce.

HERBS & SPICES: I always love adding fresh herbs to this Mediterranean pizza. I suggest fresh basil, dill or parsley. Use Mediterranean spices like za’atar, sumac or Greek seasoning to add flavor to the pizza.

CHEESE: Other than feta cheese I think goat cheese or Parmesan cheese would be nice on this pizza.

PROTEIN: Add shrimp, grilled or shredded chicken, italian sausage, prosciutto or ground lamb for an extra boost of protein.

TIPS WHEN MAKING A SKILLET PIZZA

PREHEAT THE SKILLET: Preheating the cast iron pan or pizza stone ensures a crispy pizza crust.

If you like a crispy crust you can add the skillet to the 500 degrees oven and let it heat for 5 minutes so it is a hot skillet. By preheating the skillet at high heat it will begin to cook and crisp as soon as it hits the cast iron.

Remove the skillet and carefully add the olive oil and then add the dough. From here you will bake the pizza.

DON’T OVERLOAD: Try not to add too many extra toppings as it can overload the cast iron skillet pizza and make the crust soggy.

CORNMEAL: You can sprinkle cornmeal on the skillet before adding the dough. This helps create an extra crispy crust.

OLIVE OIL: Make sure to add olive oil to the cast-iron skillet as this helps prevent the dough from sticking.
